This is a Kiritsuke (Multipurpose) knife. It is made not only stainless steels and ceramics, but also Aoko (Blue steel #2).
Until recently, the Kiritsuke knife was similar to a Japanese-style beef knife. In short, anything can be a knife. It has a wide range of uses, such as cutting vegetables and grinding sashimi.
Recently, the Japanese-style gyuto has been overshadowed because it is easier to use. However, a single-edged steel knife has a sharpness different from that of a gyuto, and has a delicate sharpness unique to Japanese knives.
This knife uses blue 2 steel. The blade is harder and longer sharp than white steel.
